Partly due to fishing and related activities, the port of Mazarrón was an important economic center during late antiquity. Next to the port is the Factoría de Salazones. This large salt factory dating from the 4th and 5th centuries AD was discovered in 1976. The structure of the Factoría Romana de Salazones corresponds to places intended for cleaning, cutting and salting the fish. The most important element in the Factorías de Salazones were the basins or tanks in which the fish was macerated or marinated with salt. This process took between twenty days and three months. Later the fish was seasoned in the same basins and the different fish sauces were made. The absolute gem among the sauces was the Garum. This sauce was essential in every Roman kitchen. They were therefore prepared to pay large sums for this. In addition to the exhibition of the archaeological remains of the Factoría de Salazones, one can also view the rich archaeological heritage of Mazarrón and Puerto de Mazarrón in this museum.
